green masala fish curry...



Ing:
1-2 small promfrets or any fish you like.
1 small onion chopped
2 tbsp of green masala(if needed add more)
1/2 can coconut milk
chopped cilantro
1/2 tsp haldi
1/2 tsp red chilli pd
1/2 tsp coriander/cumin pd
1/2 tsp tamarind pulp(concentrate)
salt to taste

method:
heat oil.Add onions and green masala(mixture of green chilli,cilantro,ginger,garlic ground together)
then saute for 5 mins.when it leaves oil on the side.add all spices and coconut milk.
add salt and 1 cup water.bring to a boil and then add the promfret pieces which are washed.
bring to a boil and simmer for 15 mins.Garnish with cilantro and serve hot with rice or rotis.

I made these wraps last weekend...

Recipe
1 package of flour tortillas
1 cup grated cabbage,carrot,steamed corn each
1 cup lettuce shredded
1 tsp mustard
1 tbsp chilli sauce
1 tbsp sour cream
1/2 cup ranch dressing
salt/pepper
mix all the ingredients and fill the tortillas and make rolls and crisp them up in a pan sprayed with oil.
enjoy with hot chiili sauce or jalapeno sauce

Microwave bhaji




Hi all,
I made this quick Microwave bhaji which came out good.I am sharing this easy recipe with you all....
1 chopped onion
2 small chopped tomatoes
1 cup mixed vegetables(frozen)
1 large potato chopped (1/2 inch cubes)
1/2 tsp cumin seeds and hing
1 tsp coriander-cumin pd
1/2 tsp haldi
1/2 tsp chilli pd
salt to taste

method:
take a microwaveable container and add 1 tbsp olive oil and cumin seeds and hing.Microwave for 1 min.
Then add tomotoes and microwave for 2 mins.Add potatoes and vegetables and all spices.Add 1/4 cup water and cover so that it does not splatter and cook for 5 mins.
garnish with chopped cilantro.Serve with Chapato or roti.
Microwave Times may varyEnjoy!!!!

Chicken subs




Hi all,

I wanted to try an indian spice sub sandwich.I tried it yesterday and came out good.
I clicked a few pictures of the sandwich.
I bought some chicken thighs and marinated them with chicken curry masala,paprika,salt,dry mango pd,ginger garlic paste,salt,coriander-cumin pd and let it sit for an hour.then I baked it a 375F for 45 mins and sliced it in smaller pieces.
I bought big sized sub rolls and applied mustard,hot sauce and sliced onions to it.I applied lemon juice ,salt and pepper to the onions.
Then I applied hummus to it and put in the chicken.we had it with pita chips on the side.
It was really good.next time I am going to try with another spice mixture.

Matki usal(sprouts)


Ing:
2 cups sprouted matki(muth)
you can use any sprout
1 medium onion chopped
1/4 cup grated fresh coconut
1 tsp ginger-garlic paste
1 tsp coriander cumin pd
1/2 tsp haldi
1/2 tsp paprika
1/2 tsp chilli pd
1/2 tsp sugar
2 tbsp oil
garnish with coriande leaves
salt to taste

method:
heat oil.Add onions and ginger garlic and saute till onions are soft.
then add the sprouts,coconut and masalas and 1 cup water and cover and cook till sprouts are cooked and sauce has thickened a bit.
garnish with coriander leaves and serve with rotis...enjoy

Football weekend...




I had invited a few friends over to watch football last weekend and made lasagna after a long time.It turned out yummy.We had garlic bread with lasagna.These are a few pictures of the yummy food.....
The second picture is Non-veg lasagna and third one is vegeterian.

BROCCOLI WITH CHICKPEA FLOUR(BESAN)




This is a recipe I tried after eating it at a friend's house...
I tried my own version of broccoli with chick pea flour...

Ingr:
2 cups chopped broccoli-small florets
1 small onion
1 tsp ginger-garlic paste
1/2 tsp cumin-coriander pd
1/2 tsp chilli pd
1/2 tsp turmeric
3 tbsp roasted besan(chickpea flour)
salt to taste

method:
heat oil and ad onons and gin-garlic paste. saute for 5 mins .then add broccoli and all masalas and stir well.cover and steam cook. Do not add water at all.
then once broccoli is steamed well then add the roasted besan and mix well and stem cook for 5 mins more. You can add extra oil at this time id needed.
enjoy with hot rotis...

Broiled Tilapia fish










I had friends over for the weekend and decided to broil some fish.
We love tilapia so I cut in into pieces and applied green paste (garlic,ginger,chillies,cilantro),lemon juice and black pepper and old bay seasoning(It is a special seafood seasoning which is very tasty).
Then I broiled the fish for 15 mins on high.I garnished it with cilantro.
The result was a tasty crispy fish which we ate with a shrimp curry

Vermicilli vegetable upma





Hi all,
I rarely make this upma as I am the only one who loves it...
I made it today for a friend and so decided to put it online

Method:
1 cup roasted vermicilli
1 or 1 1/4 cup warm water
curry leaves
chopped green chillies
1/2 tsp mustard seeds
1/2 tsp cumin seeds
hing
1/2 cup chopped cilantro
1 cup mixed veg's like carrots,corn and peas
1/4 cup cashew pieces
1 small chopped onion
salt to taste
1 tsp lemon juice
1/2 tsp sugar

Heat oil. Add mustard seeds and cumin seeds and hing.
Add onion,chillies and curry leaves and saute.
Then add vegetables and cashew pieces and all seasonings.
Add the roasted vermicilli and saute for 5 mins
Then add water and mix well and cook till done.
garnish with cilantro,grated coconut

Spinach with moong dal


This is a very simple recipe and very healthy too..
Ing:
1 small pack of frozen spinach(you can use fresh spinach too)
1 cup moong dal(soaked for 1 hr)
2 green chillies chopped
3-4 cloves of garlic crushed
1/2 tsp turmeric
salt
1/2 tsp jaggery
1/2 tsp cumin seeds
hing

method:
heat oil in a pressure cooker. Add cumin seeds and hing.then add garlic.chillies and let garlic brown up.
Then add haldi and moong dal.Season with salt and jaggery.
Add spinach and pressure cook for 1-2 whistles.
serve hot with rotis...

Masoor pulao




Ingredients:

1 cup masoor(lentils) soaked overnight and drained
1 cup rice washed and drained
2-3 chopped garlic cloves
1 tsp coriander cumin pd
1 tsp goda masala
1 chopped onion
1/2 cup chopped cilantro
1 tsp chilli pd
1/2 tsp haldi
cumin seeds and hing

Method:
Heat oil
Add cumin seeds and jeera.add onion and garlic and fry.
then add masoor and all masala powders.
saute and add 1/2 cup water and half cook the masoor.
Then add rice and saute till it gets well coated.
Add 2 cups water and cover and cook till done.
garnish with cilantro.ENJOY!!!!!

chickpeas with potatoes












ingreidients:
2 medium potatoes
1 can chickpeas drained and washed
1/2 cup cilantro
1 tsp ginger garlic paste
1 onion chopped
1 tsp each of coriander cumin pd,goda masala,chilli pd
1/2 tsp turmeric
1/2 cup coconut milk

method:
heat oil, Add the onions and saute. Add ginger-garlic paste and all saute.Then add potatoes and all masalas and 1 cup water and cook till potatoes are half done.
Add coconut miilk,chick peas and cook till done.
garnish with cilantro
Eat with Indian naan. It is very easy to make and very tasty!!!!

Busy morning

I have been thinking about what to make for my guests today evening.All the ingredients are purchased ,now I have to get cooking.
I will try and put most of the recipes on the blog and a few of the pictures too.
Its been a few hours and I have been chopping and cooking...
The first thing I made was Mutter paneer




MUTTER PANEER
Ingredients:
1 package of paneer
2-3 cups of peas
1 can crushed tomatoes
1 larege onion
1 inch ginger
3-4 garlic cloves
2 tsp garam masala
1 tsp haldi(turmeric)
1 tsp paprika (for color)
1 tsp coriander-cumin pd
salt to taste

Method:
Pan fry the paneer and cut into cubes
Heat oil(3-4 tbsp).Finely chp onion and make a paste of ginger-garlic.
Add to oil and saute till light brown. Then add crushed tomatoes and saute for 15 mins till oil leaves sides. Add all masalas and saute.The masala will come together. Then add peas and water and cook till done. lastly fold in the paneer cubes.
enjoy with Indian rotus or naan

hash brown potato sabji(vegetable dish)




Ingredients:
32oz hash brown potatoes(cut into small cubes)
4-5 curry leaves chopped
3-4 small green chillies chopped
1/2 tsp turmeric pd
1 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp hing
1 tsp urad dal
2-3 tsp lemon juice
1 cup chopped cilantro
salt to taste 1/2 tsp sugar
oil

method:
Heat 2-3 tbsp oil in a nonstick pan.
add mustard seeds,cumin,hing,curry leaves,chillies,urad dal and let it cook for 2-3 mins.Add turmeric pd and saute.
Then add potatoes,and saute for 5 mins. cover and let it cook.
then add sugar,salt,lemon juice and mix well.
lastly garnish with cilantro.
It goes well with chapatis or rotis.
serve hot!!!

Spring rolls


Hi everyone,
i wanted to make something different for my son and decided to try these spring rolls which came out good.I did not get a chance to take a picture as my family ate them up before I could switch on the camera.So I am just giving you all the recipe..

Ingredients:
1 pack of egg rolls wrappers
1 medium onion sliced
1 pack of broccoli slaw
(you can use grated carrots,red cabbage and broccoli)
1 tsp hoisin sauce
1 tsp ketchup
1 tsp chilli garlic sauce
salt and pepper
1 tbsp olive oil

method:
heat a pan and add oil.Add the onion and saute on high flame for 5 mins.Add veg's and sauces and saute till everything is coated well with the sauces but still crisp.
preheat oven to 350F.
take a wrapper and put some filling on one corner.Bring the other corners to cover the filling and then roll into a spring roll.Finish all and keep on a greased nonstick tray and then spray or apply butter or olive oil to the top of the rolls.
bake for 15 mins and the turn them and bake another 10-15 mins.
serve hot with ketchup or chilli sauce.Enjoy!!!!!!!

Peas pulao

Ing:
1 cup peas
1 1/2 cups rice(washed and drained)
1 small onion chopped
1 tsp corainder-cumin pd
1/2 tsp haldi
1 tsp chilli pd
salt
1 1/2tsp ginger garlic cilantro green chilli paste

method;
Heat oil. Add onion and gingergarlic paste.
Then saute for 5 mins.
add peas and all masalas.
mix well and add rice.
let the rice get coated well with all masalas and the add 3 cups warm water.
cover and cook till done.
serve hot with Raita

Date walnut cranberry loaf



Hi friends,
I tried this cake yesterday and came out really good.






1 cup wheat flour
1/2 cup All purpose flour
1 tsp baking soda
1 tsp vanilla essence
2 eggs
3/4 cup sugar
1/2 cup oil
1/2 cup chopped dates
1/2 cup chopped dried canberries
1/2 cup chopped walnuts
salt(pinch)
1 pack applesauce(optional)

method:Mix all dry ingredients and keep aside.
Blend the sugar and oil together and then add eggs and mix well and then add all the other ingredients.Take a loaf pan and srray with cooking spray and then put mixture and bake at 350F for 45-50 mins.
serve with vanilla icecream.enjoy!!!!

Beet radish sabji



I tried this new vegetable and came out good.I wanted to share it with you all
Ingredients:
1 can sliced beets(chopped into 1/2 inch cubes)
1 small white radish(chopped into 1/2 inch cubes)
1 green chilli
few curry leaves
1/2 tsp mustard seeds and hing
salt to taste
1/2 tsp sugar 1/2 tsp garam masala
Garnish with fresh coconut

method:
heat oil in a nonstick pan and add mustard seeds and hing.After that add finely chopped green chilli and curry leaves.then add the chopped beet and chopped radish and the spices and saute for 5 mins.Cover and cook till done and garnish with fresh grated coconut.

Roasted Veggies


Hi all
I roasted some veggies today and they looked good so decided to share a picture with you all.
method:
1 orange bell pepper
1 yellow bell pepper
1 pack button mushrooms
1 cup baby carrots
1 medium onions
Chop everything into large pieces and marinate with olive oil,dried basil leaves ,salt and pepper for 2 hrs.Broil on high for 15 mins.Serve hot with your favourite pasta.enjoy!!!
you can add other veggies like zuchinni,red bellpepper,portabella mushrooms etc

Leftover rice


I like to spice up left over rice in different ways.Today I made a quick pulao with leftover rice from dinner yesterday.
Ingredients:
1 1/2 cup cooked rice
1/2 cup green beans finely cut
1/2 cup carrots finely cut
1/2 cup onion finely chopped
1/2 tsp pulao masala
salt to taste
1 small green chilly finely chopped
olive oil for tempering
1/2 tsp cumin seeds and hing

method:
Heat olive oil.Add cumin seeds and hing.
Then add all veggies and chilly and masala and saute till light golden brown. Add salt and cover and let it steam for 4-5 mins.
Serve hot with raita
