Matki usal(sprouts)


Ing:
2 cups sprouted matki(muth)
you can use any sprout
1 medium onion chopped
1/4 cup grated fresh coconut
1 tsp ginger-garlic paste
1 tsp coriander cumin pd
1/2 tsp haldi
1/2 tsp paprika
1/2 tsp chilli pd
1/2 tsp sugar
2 tbsp oil
garnish with coriande leaves
salt to taste

method:
heat oil.Add onions and ginger garlic and saute till onions are soft.
then add the sprouts,coconut and masalas and 1 cup water and cover and cook till sprouts are cooked and sauce has thickened a bit.
garnish with coriander leaves and serve with rotis...enjoy

Bean and vegetable soup






I made this soup today and tasty really good
Ing:
1 can of cannellini beans(you can use any kind)
1 tomato chopped
1 onion chopped
1 carrot chopped
1/2 tsp each of oregano(or herb of your choice) and pepper
1 tsp lemon juice
salt to taste
2 cans of low sodium chicken broth
garnish -cilantro

method:
Heat a tbsp of olive oil.
Add onion and tomato and carrots.Saute for 5 mins.then add herbs and seasonings.
Pour in the chicken broth and bring to a boil.Then add beans and boil for 10 -15 mins. serve hot with a piece of crusty bread.Its a very simple soup which you can make with all items easily available from your pantry.I add cooked chicken to the soup sometimes to make it more yummier.....
The other types of beans you can use are kidney beans,garbanzo beans,pinto beans etc
