Spinach and cheese pinwheels




I made these pinwheels sometime back and shared them with friends and everyone really liked the taste and the look.
So today I made them again with a friend of mine and clicked some photos so I could share the recipe with you all.

Ingredients:
1 packet of Frozen puff pastry sheets(17.3oz)
1 pack of frozen chopped spinach(defrosted and well drained)
1 cup of fat-free ricotta cheese(whole milk ricotta is ok too)
salt and pepper to taste
1 medium sized garlic clove finely chopped
Method:Thaw the 2 puff pastry sheets at room temperature and the roll them to a 1/4 inch thickness.
In a large bowl, add the spinach,ricotta cheese,salt,pepper and garlic and mix well.
mixture should be thick.
Spread the mixture evenly on the 2 puff pastry sheets and roll the pastry sheet with the mixture inside.Seal the two ends so that the mixture does not come out and cut into 1/2 inch pieces and keep it on an ungreased baking tray.Bake at 400F for 15-20mins.


Serve with tomato ketchup or hot sauce.

The pinwheels look yummy!!
I would have loved to try them ,but i do not get puff pastry here in India ,can you suggest an alternative.
