Roasted Italian style vegetables

Ingredients:

1 zuchinni
1 small yellow squash
1 green bell pepper(any other bell pepper can be used like orange, red)
2 carrots
1 medium sized onion
1 pack button mushroom
1 tbsp olive oil
1 tsp finely chopped garlic
salt and pepper to taste
1/2 tsp crushed red pepper flakes
1 tsp dried basil leaves

method:
Chop all vegetables into 1 inch cubes and marinate them for 3-4 hrs in the refrigerator.
Preheat oven to 400F.
Bake them on a non-stick baking tray for 15mins.
Broil them on high for 5-7 mins more.
Serve hot with your favourite pasta.

It turns out really good and try it with a pasta made with tomato sauce.Sprinkle the vegetables with freshly grated parmesan cheese for added flavor.
